I have noticed that I can pull a trailer with some stuff easier than I can drive with that same stuff in the back of my truck. I am not counting fuel consumption, but how come I get better acceleration pulling the trailer as opposed to loading it in the back of the truck?

If you hauling something that is 200lbs in your truck, the weight of that item slows down your truck. If you carry that same 200lbs in a trailer and not in your truck as you said it is easier to pull 200lb then it is to carry 200lbs. This goes for everything, if you yourself tried carry 200lbs as opposed to pulling it in a wagon or something you will find that you want get as far. hope this helps you out.
